
One Pot Vegetarian Pasta
right, so this is going to change your life, fellas. I am not sure if I was the one still living in the last century or something, but I never though about the possibility to make pasta in one pot with sauce elements. it seems so obvious now, when I tried it! and believe me, it was so good that I think it will become one of my favourite fast dinners of all times. I found this idea on Martha Stewarts website and added some extra ingredients (as always).
•Mushrooms, leek, celery, onion, garlic, cherry tomatoes.
•Some salt + pepper, fresh tarragon + thyme.
•Vegetable stock (I used one cube)
•Some dry white wine
•Olive oil
•Pasta
• Place pasta into the bigger pot or pan.
• Chop veggies and place them in the pot with the pasta.
• Season with some salt, pepper and chopped herbs.
• Pour vegetable stock to the pot and boil mixture, stirring and turning pasta frequently with tongs, until pasta is cooked and water has nearly evaporated, it should take you about 10 mins.
• Add some white whine into the mixture and boil for another few minutes.
• Then- add some olive oil or butter and mix everything again.
and this is it- just add some parmesan on top and enjoy this quick and super tasty meal with a glass of wine and some great movie! you won’t be disappointed, I promise! it’s a bit cheeky, I know, but we don’t have to spend hours and hours in the kitchen to prepare something special!
